What happened
The starter was lively, the dough was… less so. Pretty sure I under-proofed it, over-flour-ed it, and opened the oven twice like an amateur (I am an amateur).
Next time
- Trust the poke test, not the clock.
- Buy a banneton instead of the “bowl with a tea towel” method.
- Breann gets veto power over the 6am bake schedule.
